Wow! It certainly has been a long time since my last blog post! Lots of changes have happened at Your Forever Nutrition Counseling, starting with a new and improved website.

My NUTRITION PRACTICE CLIENT PACKAGES have been re-designed and payments can now be made online! I partnered up with Healthie, a telehealth platform for nutrition professionals.
They take care of the Business end - I take care of the Nutrition End!! WIN WIN! This will also enable me to expand my online Nutrition Counseling Practice.
Best of all - The BLOG is going to be much more active heading into the new year. I will be posting on Mondays and Thursdays. Recipes, Tips, Motivation and most importantly: Fact Based Nutrition Information. Please feel free to message me if you would like to have a specific topic covered. I am also looking for guest bloggers!

AND.... Because I cannot leave you this Snowy Sunday Night without a little something - I would like to share one of my families favorite muffin recipes. They are loaded with fiber-rich oatmeal, healthy fats and a little touch of chocolate. Because, really, life is better with a little touch of chocolate!
PEANUT BUTTER CHOCOLATE OATMEAL CUPS

INGREDIENTS
2 ripe bananas
1 cup milk (dairy or non dairy)
1/2 cup natural peanut butter
1/4 cup maple syrup
2 eggs
3 cups old fashioned oats
1/8-1/4 cup mini chocolate chips
1 tbl baking powder
1 tsp vanilla
INSTRUCTIONS
Heat oven to 375
Mash bananas in mixing bowl , add remaining ingredients. Stir well
Line muffin pan with muffin cups. Fill each with batter (heaping)
Bake for 20-25 minute or until top is brown
I like to sprinkle a little cinnamon on top for flavor
(12-14 muffins)
These muffins are delicious and best of all freeze very well. They are great as a quick snack or post workout re-fueler!
